Planet Center Cheese is a project awaiting approval to be part of the New Madison Public Market on First Street. The Intent is to provide Madison with a vibrant Cheese Shop on par with those in major cities, here in the capital of the Cheese State.

What We Strive for
We believe that fine cheese is a vehicle to explore, land use, culture, sustainability, locality, and the diversity of the world at large.
We will be a cut-to-order shop, with trained cheesemongers. We will offer a variety of sandwiches based on our rotating selection of cheese and charcuterie.
Our Team
Steve Schaefer
The prime mover behind all of this is Steve Schaefer, who has about 40 years of retail and direct import experience on both coasts and here in Madison.
